I am bringing you all yet another festival recipe with a very healthy twist in it . The recipe for today is a sprouted horsegram sundal . So you might be thinking what is a sundal or what is horsegram . A sundal is a type of offering made during auspicious days using any lentils or pulses. Regularly a sundal is made out of chick peas, but during navaratri we make sundal using a variety of number of pulses . So here I have made a sprouted horsegram sundal as an offering . Sundal is a kind of stir fry made with pulses flavoured with mustard, red chillies , curry leaves and coconut , some people do add cumin & ginger to it but I didn’t for this recipe . We don’t add onion or garlic to dishes which are used as offerings. To make this sundal more healthier I have sprouted them as well , check in the notes to see how to sprout horsegram and also sprouted pulses makes the cooking time lesser as well .
Horsegram is an unusual lentil , which is not used commonly at all parts of India . This lentil is a very famous one in southern part of India , we use this lentil to make various dishes like chutney , rasam , sambar or coconut based curries . The whole seeds of this lentil is used as a feed for horse , that’s how it has got it’s name. Now let’s read more about this delicious easy sundal which can be made in no time.
Serves- 3 to 4
Prep Time – 2 days (for sprouting)
Cooking time – 5 minutes

Sprouted Horsegram – 1 cup
Grated coconut- 2 tablespoons
Mustard seeds- 1/4 teaspoon
Whole red chillies- 3 or 4
Curry leaves- 1 sprig
Split urad dal – 1/2 teaspoon
Asafoetida- a pinch
Oil- 1 teaspoon
Salt – as needed
1. In a pan heat oil then add mustard seeds to it and wait for it to splutter
2. To this add split urad dal , whole red chillies and curry leaves and bring it to medium heat
3. Now add the horsegram to it and fry for 20 seconds
4. Add asafoetida, grated coconut and salt to it , give it a stir and cook for a minute in low heat .

Soak horse gram in hot water for 6 to 8 hours . Then drain and wash the horse gram and leave it in a closed container for 24 to 30 hours to sprout well . Sometimes the sprouting time might increase depending on your kitchen temperature.
