Quinoa Salad with Dill Vinaigrette

Today I am presenting you all a tasty and filling salad which can be served as a main course for a light supper or as a side for an elaborate lunch . Here I am bringing you all a very colorful quinoa salad with tangy dill vinaigrette. It is healthy , scrumptious and very satiating, the addition of Dill and raisins took this simple Quinoa salad to an entirely different level.

Quinoa the new health food and due to it’s nutty taste we Indians have found it very difficult to incorporate in our diets . So here you go try this delicious and fresh salad , trust me you will make this again and again . It is such a simple dish to make, easy to put together and so flavourful . Even though quinoa is a healthy and rich in fibre seed , just need to watch while eating it . So to control that excess carb intake I have added tons of vegetables to this salad and a slight sweetness with the addition of raisins to it

Serves- 2 as a side salad, one person if it is a main meal

Ingredients

White Quinoa cooked – 1/2 cup
Coloured Bellpeppers – chopped 1/4 cup (I used all colors :p)
Cucumber- Chopped – 1/4 cup chopped
Grape tomatoes- 1/4 cup chopped (If you don’t have grape tomatoes , feel free to use regular tomatoes)
Raisins- 2 tablespoons

For dressing
Olive oil – 2 tablespoons
Lemon Juice- 3 tablespoons
Dill leaves- chopped 1 tablespoon
Salt and Pepper – as needed

Method

1. Cook quinoa according to the package instructions, fluff it with the fork and keep it in the fridge to cool

2. While quinoa is cooling , we can chop the vegetables . Chop bell peppers, grape tomatoes and cucumber and keep it aside

3. Now let’s make the dressing . Chop dill leaves finely and keep it aside . In a bowl whisk olive oil , lemon juice , salt and pepper , to this add the chopped dill leaves . Season more if needed

4. In a bowl place quinoa, chopped vegetables and add the dressing over it . Give it a stir check for seasoning , add more if required. Top it with raisins and chill before serving
